Cajun Fried Chicken
Servings: Makes 4 Servings
Ingredients:
1 cupall-purpose flour
2 teaspoon salt
1 teaspoon garlic powder
1 teaspoon garlic powder
1 1/2 teaspoon paprika
1 teaspoon dried thyme, crushed
1 teaspoon dried oregano,curshed
1/4 teaspoon black pepper
1/2 to 1 teaspoon cayenne pepper
1 2-1/2 to 3 pound broiler-fryer chicken, cut up
2 Eggs Beaten
Preparation:
Mix together 1/2 cup flour, salt, garlic powder, papriks, thyme, oregano, black pepper, white pepper and cayenne pepper in bowl; set aside. Coat chicken pieces with remaining 1/2 cup flour; shake off excess flour. Dip chicken pieces in beaten eggs, then
coat chicken with seasoned flour mixture.
Heat oil about 1/2 inch) in 12-inch skillet over medium-high heat until hot. Add chicken, skin-side down, and brown quickly on all sides, about 10 minutes. Reduce heat to low; cover and cook until thickest pieces are done, about 30 minutes, turning once or twice.
Remove cover during last 5 minutes of cooking to crispen chicken |
