Ethiopian Spicy Tibs

Servings: Makes 6 Servings

Ingredients:

3 tablespoons vegetable oil
1 teaspoon Cayenne Pepper
1 teaspoon Paprika
3 teaspoons crushed fresh garlic
1 lb beef cubes
1 small onion chopped
½ green bell pepper chopped
1 small tomato chopped
1/2 cup red wine
Salt and Pepper to taste

Preparation:

In a large skillet heat the vegetable oil. Add the Cayenne pepper, Paprika, garlic, onions, green peppers, tomato and red wine. Cook until the onions, tomato and green peppers are tender. Make sure you do not over cook.

Add the beef cubes. Add salt and pepper to taste. Cook the beef to your desired temperature.  Serve with Ethiopian bread (Injera) or over rice.
