Stew Shrimp

Servings:  Makes 4 Servings

Ingredients:
1 pound shrimp (clean and peeled)
1 onion, chopped
3 minced cloves
1/2 green chopped
1 tomato, chopped
1/2 teaspoon rubbed thyme
2 tablespoons olive oil
salt, black, and hot pepper to taste

Preparation:
Use a large pan and sauté the onions for 3 minutes in 1 tablespoon of oil.
Add crushed garlic, peppers and thyme, sauté for 2 minutes.  Add tomato and cook, stirring constantly, for five minutes.  Add more oil if needed, then add shrimp. Stir until they are firm and pink (about 3 minutes).
