Grilled Honeydew Melon
Servings: 4

Ingredients:
1 ripe honeydew mellon, cut into 2 inch cubes
1/4 cup fresh lemon juice
2 tablespoons artificial sweetener or Splenda
1 teaspoon ginger, minced
skewers

Preparation:
Combine all lemon juice, sweetener, and ginger in a large bowl.

Add sliced melon and toss to coat.

Let stand for 5-7 minutes in room temperature.

Preheat grill for medium-high heat. Thread melon pieces onto skewers.

Place on grill and cook for about 3-4 minutes, or until slightly soft and beginning to brown.

Remove from heat and serve with favorite ice cream.
