Stephanie's Kicked Up Sweet Potato Preparation: Peel and cut fresh potatoes into bite size pieces. Place in a 3-quart pot and cover with water. Bring to a boil over high heat. Reduce heat to medium. Cook potatoes at a gentle rolling boil for 20 minutes or until tender. Drain well and return potatoes to cooking pot. Add butter to potatoes, stir well to melt and combine the butter. Then stir in the Rothschild Sauce. Season with salt and pepper to taste. Serve it hot. |
